Baijiu (say By-jew) is Chinese hard liquor. The distilling process is similar to making whiskey. Baijiu was traditionally aged in clay jars that were buried underground. It is clear and colourless and has a smooth flavour, a mild, pleasant aroma and a nice finish. Dragon Mist Baijiu is made using a traditional Chinese technique with wheat grown in Dawson Creek, BC and pure, clear Canadian glacial water – that’s all – no other additives or neutral grain spirits from other sources.

Our Rhubarb Gin is an exciting kick off to summer! First, we start with locally grown rhubarb from Vancouver Island farmers harvested in May and June. Second, we freeze then press the rhubarb for its juice. finally combining it with our specially designed gin and a little bit of sugar to balance. With no colour or additives, this gin is best enjoyed fresh and finished soon after opening, but we doubt it will last that long! On a visit to London, UK, Alayne and Jason spent a rainy walk back to their hotel discussing all of the local gins they had tasted. What makes a good Vodka- care, purity, and time. Our craft vodka is made from BC grown soft spring wheat, slowly distilled 3 times throgh a large copper column for an extremely clean and crisp spirit. Formerly Kazuki Gin, “Beacon” embodies a sense of place, signifying two monumental sites on Vancouver Island where Sheringham Distillery originated–the iconic Sheringham Point Lighthouse beacon located by our first distillery and the beloved springtime cherry blossom-lined Beacon Hill Park. Brilliant floral and fruitiness of the cherry blossoms deliver polished and rounded edges with soft citrus notes of yuzu and grapefruit, and local green tea leaves and flowers give a delicate herbaceous note through to the finish.
