Our Rhubarb Gin is an exciting kick off to summer! First, we start with locally grown rhubarb from Vancouver Island farmers harvested in May and June. Second, we freeze then press the rhubarb for its juice. finally combining it with our specially designed gin and a little bit of sugar to balance. With no colour or additives, this gin is best enjoyed fresh and finished soon after opening, but we doubt it will last that long! Fermented with a French Saison yeast strain, and double pot distilled before aging over 4 years in a French Oak barrel previously holding our Kiwi Saison Ale. The locally grown White Wheat creates a smooth, gentle palate with soft notes of cotton candy, honey and vanilla ice cream. Though slightly less spicy then our previous 100% malt releases, this Whisky maintains the deep toasted oak, vanilla and toffee characteristic of our unique barreling process.
