On a visit to London, UK, Alayne and Jason spent a rainy walk back to their hotel discussing all of the local gins they had tasted. Feeling inspired to experiment with this classic spirit, Jason began cataloging flavors to create his own version of a London Dry gin—a classic gin with a Sheringham-edge. With a balanced bouquet of bright juniper and citrus, Sheringham’s London Dry Gin offers a luxurious mouthfeel with smooth edges, leaving the palate with a crisp and dry sensation and a faint trace of spice. Made in the spirit of romance, Jason and Alayne wanted a special, decadent dark chocolate sipper, perfect for extra sweet moments with the ones they love. We teamed up with Sirene Chocolate, artisan chocolate makers from Victoria, B.C., to produce a dark chocolate-lover’s dream: Sirene Chocolate Liqueur. Using the byproducts of their production process—the shells and husks of cacao beans that have been ethically grown and sourced—we extract the raw characteristics of the cacao. Fermented with a French Saison yeast strain, and double pot distilled before aging over 4 years in a French Oak barrel previously holding our Kiwi Saison Ale. This rum is a testament to innovation and terroir. Grown on our estate in Southern Vancouver Island’s unique Mediterranean-like microclimate, our sorghum cane benefits from an extended growing season and the influence of the coastal air, resulting in a rich and expressive profile. We’ve cultivated and harvested three generations of sorghum cane, carefully fermenting and distilling it to preserve its bright, grassy, and earthy character. Unlike traditional Agricoles, our expression has been aged for over a year in French oak barrels, adding depth, warmth, and complexity without losing the vibrant essence of the cane.
This premium Akvavit is copper pot distilled using a traditional Scandinavian recipe. This liquorice forward spirit gets its character from six hand picked botanicals which include caraway, fennel, anise and Seville orange.
