Akvavit is a savoury gin-like spirit (an Eau De Vis to be exact) without any juniper-y pine flavours. Beautiful green cardamom, Canadian coriander, fresh BC-grown dill and caraway seed make a spirit that is traditional served chilled as a shot to go along with a pint of fresh light beer, or on its own to brighten the room on a gray fall day.

Jason has fond memories of cooking with rhubarb over the years, especially compote made with rhubarb freshly harvested from his garden. Drawn to the winning combination of rhubarb and star anise, he envisioned a liqueur that would taste as fresh and bright as a new summer’s day. With its classic gin base, premium rhubarb grown in British Columbia, and maceration process involving star anise and lemon skins, this liqueur achieves a perfect balance of tart, sweet, and subtly vegetal notes. Made on the lake in Invermere, BC, we’ve crafted this exceptional spirit free from artificial colours and dyes. How did we achieve such an adventurous undertaking? By using only the plumpest, ruby red raspberries that we could find. The result is a vibrant crimson vodka with a perfectly field fresh raspberry flavour.

When Vancouver Island hands you rare hand-foraged Black Truffles, you make a Vodka… right? Sniffed out by specially trained Vietnamese truffle pigs, the Burgundy truffle -Tuber aestivum- are foraged late fall. The truffles are macerated in a wheat based neutral spirit and then redistilled under vacuum to produce an elegant, sweet and slightly earthy vodka – the Spirit of Alberni. 40%

Baijiu (say By-jew) is Chinese hard liquor. The distilling process is similar to making whiskey. Baijiu was traditionally aged in clay jars that were buried underground. It is clear and colourless and has a smooth flavour, a mild, pleasant aroma and a nice finish. Dragon Mist Baijiu is made using a traditional Chinese technique with wheat grown in Dawson Creek, BC and pure, clear Canadian glacial water – that’s all – no other additives or neutral grain spirits from other sources.
