On a visit to London, UK, Alayne and Jason spent a rainy walk back to their hotel discussing all of the local gins they had tasted. Our Rhubarb Gin is an exciting kick off to summer! First, we start with locally grown rhubarb from Vancouver Island farmers harvested in May and June. Second, we freeze then press the rhubarb for its juice. finally combining it with our specially designed gin and a little bit of sugar to balance. With no colour or additives, this gin is best enjoyed fresh and finished soon after opening, but we doubt it will last that long! Baijiu (say By-jew) is Chinese hard liquor. The distilling process is similar to making whiskey. Baijiu was traditionally aged in clay jars that were buried underground. It is clear and colourless and has a smooth flavour, a mild, pleasant aroma and a nice finish. Dragon Mist Baijiu is made using a traditional Chinese technique with wheat grown in Dawson Creek, BC and pure, clear Canadian glacial water – that’s all – no other additives or neutral grain spirits from other sources.

The Old Dame is our third Gin release with the same botanical make up of the Jackknife gin. However it has been mellowed over time in a merlot barrel where it comes with a pink hue and a delicate attitude.
We’ve taken our young whiskey, Rebel, and expertly married it with sugar and bitters in classic Old Fashioned style, then tucked it away in a barrel for months so the flavours can romance each other into a perfectly harmonized spirit.
