Distilled in copper pots using Whistler's local glacier water derived from Rainbow Mountain, this spirit is inspired by the joys of our local winters, surrounded by the beauty of our snow capped mountains. Using single BC malt spirit base coupled with small batch techniques, this Winter Spirit is first aged with oak, then infused with traditional winter spices concocted with the natural sweetness of apples. Our Rhubarb Gin is an exciting kick off to summer! First, we start with locally grown rhubarb from Vancouver Island farmers harvested in May and June. Second, we freeze then press the rhubarb for its juice. finally combining it with our specially designed gin and a little bit of sugar to balance. With no colour or additives, this gin is best enjoyed fresh and finished soon after opening, but we doubt it will last that long! Combine it with a premium tonic and ice for a refreshingly summer cocktail. We love Fever Tree Cucumber tonic paired with Rhubarb Gin.

At 3 years of maturation in Barrel #3, a new Hungarian oak barrel, this Single grain 100% organic BC rye whisky just shines.

Made from 67% Island grown & malted barley and 33% Hard Red Wheat from Field 5 Farms. Fermented with a French Saison yeast strain, and double pot distilled before aging over 4 years in a French Oak barrel previously holding our Kiwi Saison Ale. The locally grown White Wheat creates a smooth, gentle palate with soft notes of cotton candy, honey and vanilla ice cream. Though slightly less spicy then our previous 100% malt releases, this Whisky maintains the deep toasted oak, vanilla and toffee characteristic of our unique barreling process.

Double distilled in copper pots connected to two 10 plate columns and using the local glacier water from Rainbow Mountain, this spirit is made with 100% BC local pale malt. Mountain Dew is our take on old school moonshine at 55% /alc vol. Mountain Dew was the code name for moonshine prior to prohibition.

Our 2025 release is incredibly limited—only one cask is ready, yielding just 350 bottles! After 6.5 years of aging, we’ve lost a whopping 39% to the “angel’s share”. With a mash bill of 51% corn, 22% malted barley, and 27% rye, this whisky is bottled at a smooth 46% ABV. It’s priced at 73,91 plus taxes.

Back in 2017 at the Roots and Wings Distillery, we set aside some pure corn spirit in a new charred barrel and waited for it to mature into a handsome young bourbon style spirit.
