Formerly Kazuki Gin, “Beacon” embodies a sense of place, signifying two monumental sites on Vancouver Island where Sheringham Distillery originated–the iconic Sheringham Point Lighthouse beacon located by our first distillery and the beloved springtime cherry blossom-lined Beacon Hill Park. Brilliant floral and fruitiness of the cherry blossoms deliver polished and rounded edges with soft citrus notes of yuzu and grapefruit, and local green tea leaves and flowers give a delicate herbaceous note through to the finish. Beacon Gin is elegant on its own and brilliantly nuanced in a Sheringham cocktail.

Distilled in copper pots using Whistler's local glacier water derived from Rainbow Mountain, this spirit is inspired by the joys of our local winters, surrounded by the beauty of our snow capped mountains. Using single BC malt spirit base coupled with small batch techniques, this Winter Spirit is first aged with oak, then infused with traditional winter spices concocted with the natural sweetness of apples. What makes a good Vodka- care, purity, and time. Our craft vodka is made from BC grown soft spring wheat, slowly distilled 3 times throgh a large copper column for an extremely clean and crisp spirit. The spirit is then carfefully chill-filtered for several days resulting in an extremely clean vodka with soft notes of citrus zest.

Honey, I'm Home is a gin crafted from locally sourced botanicals that volunteer themselves across West Coast landscapes. Grassy notes of early spring stinging nettle and thistle pair refreshingly with apples and sweet clover, finished with a wildflower honey infusion.

Jason has fond memories of cooking with rhubarb over the years, especially compote made with rhubarb freshly harvested from his garden. Drawn to the winning combination of rhubarb and star anise, he envisioned a liqueur that would taste as fresh and bright as a new summer’s day. With its classic gin base, premium rhubarb grown in British Columbia, and maceration process involving star anise and lemon skins, this liqueur achieves a perfect balance of tart, sweet, and subtly vegetal notes. A year-round delight, this liqueur is great on its own for sipping and equally enjoyable in a simple cocktail—just add ice and bubbles.

We took a barrel of compromised Chardonnay and some apple cider tailings from other local producers, giving them new life by distilling them into this wondrous, upcycled fruit brandy. We spiced it with Cobble hill blueberries, allspice, lemon, and vanilla.

On a visit to London, UK, Alayne and Jason spent a rainy walk back to their hotel discussing all of the local gins they had tasted. Feeling inspired to experiment with this classic spirit, Jason began cataloging flavors to create his own version of a London Dry gin—a classic gin with a Sheringham-edge. With a balanced bouquet of bright juniper and citrus, Sheringham’s London Dry Gin offers a luxurious mouthfeel with smooth edges, leaving the palate with a crisp and dry sensation and a faint trace of spice.
