Baijiu (say By-jew) is Chinese hard liquor. The distilling process is similar to making whiskey. Baijiu was traditionally aged in clay jars that were buried underground. It is clear and colourless and has a smooth flavour, a mild, pleasant aroma and a nice finish. Honey, I'm Home is a gin crafted from locally sourced botanicals that volunteer themselves across West Coast landscapes. Grassy notes of early spring stinging nettle and thistle pair refreshingly with apples and sweet clover, finished with a wildflower honey infusion.
This rum is a testament to innovation and terroir. Grown on our estate in Southern Vancouver Island’s unique Mediterranean-like microclimate, our sorghum cane benefits from an extended growing season and the influence of the coastal air, resulting in a rich and expressive profile. We’ve cultivated and harvested three generations of sorghum cane, carefully fermenting and distilling it to preserve its bright, grassy, and earthy character. Unlike traditional Agricoles, our expression has been aged for over a year in French oak barrels, adding depth, warmth, and complexity without losing the vibrant essence of the cane.

Our craft vodka is made from BC grown soft spring wheat, slowly distilled 3 times throgh a large copper column for an extremely clean and crisp spirit. The spirit is then carfefully chill-filtered for several days resulting in an extremely clean vodka with soft notes of citrus zest.
