Unruly Gin starts life as 100% pure BC Honey. We gently ferment our honey into mead and distill that mead to spirit using custom designed stills to separate out the harsh heads and the oily tails, ensuring that only the softest and sweetest hearts are ever collected. Amaro, one of Italy’s most iconic aperitif's and famous for its deliciously bitter-sweet flavour that is key to cocktails like the negroni. Our Amaro Classico is at the heart of The Woods award wining product range and is our Pacific Northwest twist on this famous spirit. While most amaro of this style is overwhelmingly orange focussed, our house style holds more delicate notes of citrus and evergreen that are complement by the perfect balance of bitter and sweet.

Akvavit is a savoury gin-like spirit (an Eau De Vis to be exact) without any juniper-y pine flavours. Chiaro, the beautifully delicate sister of classic amaro. Our Amaro Chiaro is less bitter and sweeter on the palate compared to traditional amaro. Jason has fond memories of cooking with rhubarb over the years, especially compote made with rhubarb freshly harvested from his garden. Drawn to the winning combination of rhubarb and star anise, he envisioned a liqueur that would taste as fresh and bright as a new summer’s day. Back in 2017 at the Roots and Wings Distillery, we set aside some pure corn spirit in a new charred barrel and waited for it to mature into a handsome young bourbon style spirit. Johnny Handsome is ready to come out to play. Unveiled on November 22, 2019, he is rough around the edges but deeply refined kind of spirit with the soul of a centenarian but the body of a barrel-chested Viking that will knock you off your feet. This new whiskey is best enjoyed neat or with a splash of water.

Named after Barrett Montfort, the founder of the Shelter Point farm, Montfort is a special field-to-flask whisky. This whisky literally has its roots in this beautiful land. A true single grain whisky, made from 100% barley, Montfort is grown, distilled and bottled entirely in one location. Each of the fields on the farm have specific soil classifications and different proximities to the sea and the forests. These micro regions produce barley grown in different ways, each with distinctive and unique flavor profiles. The outcome is a whisky of depth, subtlety and complexity.

Made on the lake in Invermere, BC, we’ve crafted this exceptional spirit free from artificial colours and dyes. How did we achieve such an adventurous undertaking?
