Baijiu (say By-jew) is Chinese hard liquor. The distilling process is similar to making whiskey. Baijiu was traditionally aged in clay jars that were buried underground. It is clear and colourless and has a smooth flavour, a mild, pleasant aroma and a nice finish. Dragon Mist Baijiu is made using a traditional Chinese technique with wheat grown in Dawson Creek, BC and pure, clear Canadian glacial water – that’s all – no other additives or neutral grain spirits from other sources.

Made from 67% Island grown & malted barley and 33% Hard Red Wheat from Field 5 Farms. Fermented with a French Saison yeast strain, and double pot distilled before aging over 4 years in a French Oak barrel previously holding our Kiwi Saison Ale. The locally grown White Wheat creates a smooth, gentle palate with soft notes of cotton candy, honey and vanilla ice cream. Though slightly less spicy then our previous 100% malt releases, this Whisky maintains the deep toasted oak, vanilla and toffee characteristic of our unique barreling process.

Formerly Kazuki Gin, “Beacon” embodies a sense of place, signifying two monumental sites on Vancouver Island where Sheringham Distillery originated–the iconic Sheringham Point Lighthouse beacon located by our first distillery and the beloved springtime cherry blossom-lined Beacon Hill Park. Crafted with hyper-locally sourced grain from within 58 miles as a crow flies from the distillery, this whisky pays homage to its Scottish roots, where triticale, a cross between wheat and rye, originated in the 1800s. Made in the spirit of romance, Jason and Alayne wanted a special, decadent dark chocolate sipper, perfect for extra sweet moments with the ones they love. We teamed up with Sirene Chocolate, artisan chocolate makers from Victoria, B.C., to produce a dark chocolate-lover’s dream: Sirene Chocolate Liqueur. Using the byproducts of their production process—the shells and husks of cacao beans that have been ethically grown and sourced—we extract the raw characteristics of the cacao. The final result is a beautifully layered experience, allowing you to taste notes of fruit, citrus, fudge, and leather, ever so lightly back-sweetened. A perfect liqueur to sip on its own, it’s equally enjoyable in a cocktail.
The Old Dame is our third Gin release with the same botanical make up of the Jackknife gin. However it has been mellowed over time in a merlot barrel where it comes with a pink hue and a delicate attitude.

We took a barrel of compromised Chardonnay and some apple cider tailings from other local producers, giving them new life by distilling them into this wondrous, upcycled fruit brandy. We spiced it with Cobble hill blueberries, allspice, lemon, and vanilla.
