Starting with a brew of BC spring wheat and malted barley, we ferment with champagne yeast before running this vodka through our two seperate stills. A few modest ingredients go into this process and what you're left with is simply good vodka.

We took a barrel of compromised Chardonnay and some apple cider tailings from other local producers, giving them new life by distilling them into this wondrous, upcycled fruit brandy. We spiced it with Cobble hill blueberries, allspice, lemon, and vanilla.

Grown on our estate in Southern Vancouver Island’s unique Mediterranean-like microclimate, our sorghum cane benefits from an extended growing season and the influence of the coastal air, resulting in a rich and expressive profile. We’ve cultivated and harvested three generations of sorghum cane, carefully fermenting and distilling it to preserve its bright, grassy, and earthy character. Unlike traditional Agricoles, our expression has been aged for over a year in French oak barrels, adding depth, warmth, and complexity without losing the vibrant essence of the cane.

The locally grown White Wheat creates a smooth, gentle palate with soft notes of cotton candy, honey and vanilla ice cream. Though slightly less spicy then our previous 100% malt releases, this Whisky maintains the deep toasted oak, vanilla and toffee characteristic of our unique barreling process.
